Ingredients
Thai Egg Plant 500 g
Lemon Juice
Turmeric Powder 1 tsp
Coconut Oil
Mustard Seeds 1 tsp
Onion
Green Chili
Garlic
Curry Leaves
Pandan Leaves
Cinnamon
Salt Powder
Tomato
Chili Powder 1 tbsp
Another vegetable that can be utilized in many cuisines is ela batu, often known as Thai eggplant. When cooking, you may always modify the amount of spices to prevent using too many to suit your palate. I'm going to share a stir fry dish with you today, and the result is a delightful vegetarian dish.
Thalana batu curry is a meal that pairs well with simple rice. Why not try cooking ela batu (thalana batu) as a stir-fry or just as a "Thalana batu baduma" if you're tired of making it always as a curry? Try this recipe for stir-frying thalana batu. You'll adore the flavor, I'm sure.
Method:
1. Wash and cut off the eggplant stalks (Thalana Batu). Slice egg plants, then take the seeds out. While cutting add to the water. Slice into bite-sized chunks, then add to water and simmer as directed.
2. Drain the water, then combine the eggplants with 1/2 tsp of turmeric powder. Set it aside. Thalana batu don't become discolored with the use of turmeric powder.
3. Slice some onion, garlic, and green chili.
4. Heat 5-6 tablespoons of oil in a pan. Add the mustard seeds and let them cook.
5. Add the onion, garlic, green chili, curry leaf, and pandan leaf after the mustard seeds begin to sputter. Saute onions until they turn to golden color. Then stir in the thinly cut eggplants. Fry eggplants till they are soft.
6. Add tomato, then incorporate the cinnamon stick, chili powder and fenugreek seeds. Mix well.
7. Add Maldive fish at this stage.
8. Cook eggplants under a cover over a low flame until they are tender.
9. As desired, add salt.
